The course addresses the interaction between environment, nutrition and health, from an individual to a global perspective. Examples of topics that are covered are how the global environment is affected by the life style and dietary habits of the individual, consequences of global environmental changes on food production and disease prevalence, and the relation between national dietary recommendations and a sustainable global development. Molecular mechanisms that mediate many of the health effects of the environmental changes caused by the human beings will also be discussed.
